Friendsgiving

A few months ago on a beach trip my friend Allison and I were talking about the holidays and where everyone was going to be and who we were spending it with.  At that time everyone’s Thanksgiving plans were up in the air so we talked about doing a Friend’s Thanksgiving (Friendsgiving….get it?).  Well it turned out that everyone has family plans this Thanksgiving, but we still wanted to do something as friends.  Well after comparing schedules and putting together a list it turned out that this weekend worked out the best.

imageAllison and her boyfriend Matt agreed to host and everyone would bring a dish to pass.  In fact they used us as a test run for their families.  As the hosts they provided the turkey (x2), mashed potatoes (10 lbs), rolls, stuffing, peas and cranberry sauce.  Allison also bought table setting stuff.  She did such a good job!  When they host their families everything will be perfect!!

imageWhen the invitations were sent out they requested an RSVP and what dish you were bringing.  I purposely RSVPd without a dish so that I could wait and see what was going to be needed.  Late last week Allison and I decided that I would bring macaroni and cheese.  One of my favorite macaroni and cheese recipes is a white macaroni and cheese.  The recipe is here. ( One of the cool things about Allrecipes.com is that the website has tools that let you modify the recipe before you start.)

imageThis recipe is so simple (I made it difficult but it really isn’t).  There are only 11 ingredients, 5 of which are cheeses.  I prefer freshly shredded cheese to the shredded cheese in a bag when I cook so I bought block cheese and grated it myself.  You can buy almost all of the cheeses shredded which would cut your prep time in half at least.  I also splurged and bought shaved Parmesan cheese instead of the graded powdery stuff (don’t get me wrong I love the powdery stuff but not in mac n’ cheese).  A little tip:  for the wet ingredients use what is called for plus a dollop or 2 extra.  Dry mac n’ cheese is never good.
